In the Kitchen: Caramel Popcorn (Clean Eating!)

A seemingly heavy snack that's easy on the calories! Super easy and very very quick :)

** You WILL have a hint of peanut butter (or whatever nut butter you decide to use) but it is not particularly strong

Nut Butter Caramel Popcorn
o  1/8 cup nut butter (ie. almond butter, peanut butter, etc)
o  1/2 cup honey
o  8 - 10 cups popped popcorn (natural flavouring -no butter!!)



**NOTE: READ THROUGH STEPS FIRST. You'll need to work very quickly.
(1) Warm honey in a small pot, bring it to a boil. It boils rather quickly so be prepared
(2) Let it boil to ~1 inch and then remove from heat
(3) Stir in the nut butter and whisk until smooth. It should be a "pourable" consistency
(4) Pour over the popcorn and mix with a spoon. Don't be tempted to mix with your hands until the mixture has cooled a bit.
(5) Eat right away or let it cool - both taste delicious!

Warm honey in a small pot

Put your nut butter in a separate bowl and pour the boiled honey on top

I used all-natural peanut butter which has a very runny consistency; made it easier when it came to mixing the honey in!

Mix popcorn in and enjoy!
