These delicious cookies are thin, light, crisp and chewy and made with surprisingly basic ingredients. Cookies have an unfortunate reputation for being high calories and a heavy indulgence but this recipe is much lighter at only 33 calories per cookie!
Ingredients
Makes: ~22 cookies
- 1/4 cup unsalted butter, melted
- 2 tbsp milk
- 2 tbsp honey
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- ~1/2 cup granulated sugar (this is to your liking. I used a little less than 1/2 cup but adjust if you prefer more or less sweet!)
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- pinch of salt
- 1/2 cup oats
- optional: almond slices, chocolate chips
Directions
- Preheat oven to 375°F.
- In a bowl of a stand mixer, combine melted butter, milk, honey and vanilla. Mix until smooth
- Slowly add in the flour, sugar, cinnamon, baking powder, salt and oats and mix to combine
- Drop 1 teaspoon of batter onto a lined cookie tray leaving space in between. If you wish, you can sprinkle some almond slices or chocolate chips on top
- Bake for 7-9 minutes. Remove from oven and let the cookies cool on tray for 2 minutes before moving them to a wire rack to cool completely.
- Cookies can be stored in an airtight container
Note: These cookies expand A LOT. The batter will spread once baked so do not place them too closely to one another on the cookie sheet. I recommend between 12-16 per tray.
